Cornmeal crusted chicken with jalapeno popper sauce: This is the fucking BUSINESS. Pound out the chicken super duper thin. I like the sauce on the thick side so I add the stock gradually and usually don’t end up using 2 full cups. Pair with waffles, but add cracked black pepper to the batter. Trust me.

PW’s chicken scallopine: Mmmm. Double the capers and go full white wine. Use good quality pasta (De Cecco spaghetti makes this dish for me).

Eggplant-goat cheese stack: Skeptical husband said it was really delicious but more of an appetizer than a full meal. I agree. The textures and flavors are so good together…it’s just not substantial enough on its own against cavepeople appetites like ours.
