Another day, another excuse to use the KitchenAid! :)

These were yummy right out of the oven, with a little butter slathered on top. Mmmm. What is it about warm blueberry muffins that’s so dang comforting?

Coconut Flour Blueberry Muffins (adapted from Wholesome Home)

  • 3 eggs
  • 3 tbsp melted virgin coconut oil
  • 3 tbsp raw honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/4 cup sifted coconut flour
  • 1/2 tsp baking powder
  • Zest and juice of 1/2 lemon
  • 1/2 cup blueberries

Preheat oven to 400 degrees F

Mix all ingredients except blueberries until well blended. Fold blueberries into the batter.

Pour the batter into 6 lined muffin cups.

Bake for 16-18 minutes.
