Dinner Tonight: Lucky Peach Edition
Instant Ramen Parisienne Gnocchi, Parmesan, Herbs
This is David Chang’s recipe from the first issue of Lucky Peach. You steep a brick of instant ramen in boiling milk, blend in a couple of egg yolks and boil it off before browning them with herbs and cheese.
This was a fussy, if tasty, take on the dish. I’m not sure that using the ramen instead of flour and butter saved me that much time, and it certainly did nothing for the fact that I’ve got pate a choux detritus in places I’ll NEVER get it out.
Still, it’s quite light. There are a lot of corner (and better) Italian joints serving something much worse.
